IsraelLabneh Day
Labneh is strained yogurt thickened into a tangy, spoonable cheese—creamy enough to spread, firm enough to roll into balls and store in olive oil. In Israel it appears at breakfast with za'atar and oil, on mezze tables with cucumber and olives, and as a cool contrast to spicy street food. A shallow well of oil and herbs turns a simple bowl into a centerpiece that invites bread immediately. Making labneh is patient kitchen craft: salt yogurt, hang it in cloth, and let whey drip until the texture is lush and spreadable. Markets sell tubs ready to eat, while restaurants plate swirls that look like soft peaks of snow under green za'atar. It is vegetarian, photogenic, and endlessly adaptable—garlic, chili oil, or just salt and the best olive oil you have. On Labneh Day, strain your own or buy the thickest tub you can find, swirl olive oil and za'atar on top, and scoop with warm pita. Celebrate a Mediterranean dairy staple that defines the Israeli breakfast and mezze table with quiet richness.
