SpainPatatas Bravas Day
Patatas bravas are fried or roasted potato chunks dressed with a spicy tomato-pepper sauce—brava—and often a cooling garlic aioli. The potatoes should be crisp at the edge and fluffy inside; the sauce should wake the palate without drowning the plate. Found on nearly every tapa menu in Spain, bravas are the crowd-pleaser that locals still order without irony. Madrid and Barcelona claim strong versions, but the dish travels everywhere potatoes and paprika meet. Some bars lean smoky and hot; others keep the sauce mild and let aioli star. Homemade bravas reward a double cook—parboil or steam, then fry or roast—so the crust holds under sauce. They are vegetarian-friendly by default and perfect for sharing across a crowded tapa table. On Patatas Bravas Day, crisp potato cubes until golden, spoon over a paprika-spiked tomato sauce, and finish with aioli if you like. Serve in a small bowl with toothpicks and watch them disappear. Celebrating patatas bravas is celebrating Spain’s most reliable tapa, fiery and friendly at once.
