Chandeleur began as a religious feast forty days after Christmas, yet in French popular culture it is first and foremost crêpe day. Children learn to flip with a coin in hand for prosperity; markets sell pans and batter mixes; crêperies do steady business from Brittany to Paris. Recipes vary by region—matefaim in the Alps, galette-saucisse in Rennes—but the shared gesture of pouring batter and flipping high unites the country.
