Calçots Day
8 mars chaque année
L’histoire
Calçots are elongated, tender Catalan spring onions grown by banking soil around the shoots so the stems blanch white and sweet. In season they are grilled over flame until the outer layers char and the insides steam soft, then peeled by hand and dipped in romesco—a sauce of roasted peppers, tomato, nuts, and olive oil. A calçotada is a messy, communal feast of smoke, gloves, and laughter more than formal plating.
The town of Valls and the wider Catalan countryside made the calçotada a late-winter and early-spring institution, drawing diners outdoors when the harvest peaks. The onions are food-first celebration: seasonal produce, open fire, and a sauce that tastes of the Mediterranean pantry. They photograph as rustic bundles, but the pleasure is tactile—sliding charred skin away to reveal sweet flesh.
On Calçots Day, grill or broil the onions until blackened, peel them at the table, and dunk generously in romesco. Invite friends and accept stained fingers as part of the fun. Celebrating calçots is celebrating Catalonia’s smoky, seasonal spring feast.
