Chinese hot pot is a shared simmering vessel of broth—spicy mala, clear bone, tomato, or herbal—into which diners cook thinly sliced meats, offal, tofu, mushrooms, greens, and noodles at the table. Dip sauces of sesame, garlic, vinegar, and chili customize each bite as it leaves the pot.
