Vermut—Spanish vermouth—is aromatized wine infused with botanicals, served on ice with a slice of orange or lemon and often an olive, especially before lunch as the vermut hour. Bars in Madrid, Barcelona, and beyond have revived the ritual: a glass, a few olives or chips, and unhurried talk. Sweet red vermut is classic; white and dry styles have their fans. The drink is bitter-sweet, herbal, and built for appetite rather than excess.

Spain’s vermouth tradition intertwines with neighborhood taverns and Sunday midday leisure. Bottles range from industrial staples to craft producers who spotlight local herbs.
