Moules-frites is the northern coastal classic of steamed mussels served with a cone or plate of fries. The mussels often cook marinière-style with white wine, shallots, parsley, and butter; the fries arrive crisp for dipping into the broth. Belgium shares the cult, yet French Channel and North Sea tables claim it with equal fervor.
