French Onion Soup Day

Het verhaal

French onion soup is the bistro classic of slowly caramelized onions swimming in beef or veal stock, topped with a slice of toasted baguette and a blanket of melted Gruyère or Comté. The onions must cook long enough to turn sweet and mahogany without burning; the cheese should blister under a broiler until stretchy and browned. Served in a deep crock, it arrives steaming, smelling of roasted sweetness and savory broth—the kind of bowl that revives late nights and cold evenings alike.

Though onion soups appear across Europe, the Parisian gratinée version became a global emblem of French café cooking. Market workers once ate it at dawn; today it anchors brasserie menus from Lyon to New York. Good stock and patient onions matter more than shortcuts. Some cooks deglaze with white wine or cognac; others insist the purity of onion and stock is enough. Either school agrees that the cheese crust is non-negotiable theater.

On French Onion Soup Day, caramelize a wide pan of onions until deeply colored, simmer with stock, and broil each crock until the cheese sings. Serve with extra bread for dipping and a simple green salad. Celebrating onion soup is celebrating the French gift for turning everyday alliums into something luxurious.
