Za'atar Day

Het verhaal

Za'atar is a fragrant blend of dried herbs (often hyssop or oregano-family leaves), sesame seeds, sumac, and salt—green, tangy, and nutty in the same spoonful. In Israel it is stirred into olive oil for dipping, sprinkled on labneh and eggs, and baked onto manakish-style flatbreads hot from the oven. A jar on the table signals a Levantine breakfast already in progress.

Wild and cultivated herbs tie the spice to regional landscapes and market stalls; countless house blends compete for loyalty. Quality za'atar smells bright and green, not dusty, with sesame that toasts in the mouth and sumac that wakes the tongue. It is vegetarian, pantry-stable, and as useful at dinner over roasted vegetables as at breakfast with bread and oil.

On Za'atar Day, mix the blend with olive oil into a dipping well, warm pita until soft, and dust labneh generously until the white shows green. Celebrate a Mediterranean-Middle Eastern seasoning that defines the Israeli morning table with almost no cooking required.
