Sambar is a South Indian lentil-and-vegetable stew seasoned with tamarind and a roasted spice blend, poured beside idli, dosa, rice, or vada. Every household guards a preferred ratio of sourness, heat, and vegetable mix—drumstick, pumpkin, eggplant, and shallots are frequent guests in the pot. The aroma of sambar powder blooming in oil is the smell of a South Indian kitchen at work, sharp, earthy, and inviting.

Tamil Nadu, Karnataka, Kerala, and Andhra/Telangana kitchens all claim beloved styles, from thin breakfast sambar to thicker rice accompaniment that coats each grain. It is vegetarian by nature and communal by habit: one pot serves a table of different main breads or cakes. Restaurant tiffin centers keep it ready from dawn because breakfast feels incomplete without a ladle of it over soft idli or into a dosa fold.
