Butter Chicken Day

Hikâye

Butter chicken is India's most famous restaurant curry: tender tandoori-style chicken simmered in a silky tomato-butter gravy enriched with cream, kasuri methi, and warming spices. Born in mid-twentieth-century Delhi kitchens that needed a home for leftover tandoori chicken, the dish spread through Punjabi restaurants and then the world as murgh makhani. The sauce should taste bright and gently sweet, never muddy—balanced by butter and cream rather than buried under them.

At home and abroad, butter chicken became a gateway to North Indian flavors for diners who wanted comfort without extreme heat. It pairs naturally with naan or jeera rice, and its color alone signals celebration: deep orange-red with a gloss of fat. Serious cooks debate the tandoor step, the tomato base, and whether to finish with honey, but the spirit stays the same—smoky meat meeting lush gravy.

On Butter Chicken Day, marinate chicken with yogurt and spices, roast or grill until charred at the edges, then fold it into a carefully simmered makhani sauce. Serve hot with bread for scooping. Celebrate the dish as Delhi's gift of restaurant warmth that still belongs on a home table.
