Éclair Day

The éclair is a slender choux pastry filled with pastry cream and finished with a glossy glaze—classically chocolate, sometimes coffee or caramel. Piped long, baked until hollow and crisp, then filled and iced, it is one of the most recognizable shapes in French pâtisserie. A good éclair cracks lightly under the tooth, then yields to cool cream; a poor one collapses or tastes of raw dough. Window displays of neat rows of éclairs are a Parisian postcard for a reason. Choux pastry—pâte à choux—is a cornerstone of French pastry technique, also used for profiteroles and gougères. The éclair's elongated form and glazed top became a nineteenth-century classic and remain a bakery benchmark. Contemporary pâtissiers reinvent flavors and finishes, yet the chocolate éclair still rules for many French customers who want one perfect afternoon treat. On Éclair Day, buy from a serious pâtisserie or pipe choux at home if you are practicing. Chill filled éclairs so the cream sets, and eat the same day for the best contrast of shell and filling. Celebrating the éclair is celebrating French pastry discipline: steam-lifted dough, smooth cream, and a glaze that looks like lacquer.
