Clafoutis Day

Clafoutis is a Limousin batter cake of whole cherries baked in a sweet eggy custard until puffed and golden. Traditionalists leave pits in for flavor; modern bakers often pit for ease. Dusting with sugar and serving lukewarm makes the fruit burst against tender custard. When cherry season ends, other fruits become flaugnarde, but cherry clafoutis remains the summer original.

The dish is country French baking: no elaborate pastry shell, just a pourable batter and ripe fruit. It travels from farmhouse to bistro dessert menus without losing rusticity. The name and method belong to central France, yet the idea of fruit suspended in custard feels universal once tasted warm from the oven. A good clafoutis should taste of butter, eggs, and cherries more than sugar alone.

On Clafoutis Day, butter a baking dish, scatter cherries, pour batter, and bake until set and lightly browned. Serve with a little cream if you wish, preferably still warm. Celebrating clafoutis is celebrating French seasonal dessert: orchard fruit, eggs, and a cake that needs no frosting.
