Hummus is the shared bowl at the heart of Israeli dining: chickpeas blended with tahini, lemon, garlic, and salt until silky, then swirled with a well of olive oil, paprika or cumin, and whole chickpeas. Levantine kitchens perfected chickpea-tahini mash long before restaurant culture; in Israel, dedicated hummusiyot turned the dish into a national outing, with diners tearing pita toward the center of one plate. International Hummus Day falls on May 13; this calendar keeps that date with Israel-owned framing—the café table, the obsession with texture, the ritual of scooping together without individual bowls.
