Fabada asturiana is a deep, sustaining bean stew from northern Spain, built on large white fabes simmered with chorizo, morcilla, and often a piece of pork until the broth turns silky and the beans stay whole. The dish is not rushed: beans soak, meats perfume the pot, and time does the thickening. A bowl of fabada on a cold day feels like Asturias itself—mountain air, cider country, and kitchens that cook for hunger rather than display.

The stew grew from farmhouse cooking where dried beans and cured meats lasted through winter. Today it appears in sidrerías and home kitchens as a pride of Asturian identity, rich enough that a modest portion satisfies. Quality fabes matter: they should cream in the mouth without collapsing into mush. Paprika from the sausages colors the broth a warm orange-red that invites bread for dunking.

On Fabada Day, soak good white beans overnight, simmer them gently with Spanish chorizo and blood sausage, and skim for clarity of flavor rather than haste. Share the pot family-style with crusty bread and cider if you have it. Celebrating fabada is celebrating Spain’s northern comfort cooking at full strength.
