Gazpacho is Andalusia’s chilled tomato soup blended with cucumber, pepper, garlic, bread, olive oil, and vinegar until smooth, then served cold as liquid salad for hot days. Ice-cold bowls or glasses make summer lunch feel possible when the air itself seems cooked.

Born as a practical way to use ripe vegetables and stale bread, gazpacho became a national summer emblem and a UNESCO Mediterranean diet talking point in spirit if not by name alone. Home blenders democratized it; restaurants refine garnish with fine dice of the same vegetables. Salt and sherry vinegar sharpen what olive oil rounds. It is vegetarian, photogenic, and endlessly adjustable.
