The story

Gazpacho is Andalusia’s chilled tomato soup blended with cucumber, pepper, garlic, bread, olive oil, and vinegar until smooth, then served cold as liquid salad for hot days. The texture can be silky or lightly rustic; the flavor should taste bright, savory, and clean rather than merely sweet. Ice-cold bowls or glasses make summer lunch feel possible when the air itself seems cooked.

Born as a practical way to use ripe vegetables and stale bread, gazpacho became a national summer emblem and a UNESCO Mediterranean diet talking point in spirit if not by name alone. Home blenders democratized it; restaurants refine garnish with fine dice of the same vegetables. Salt and sherry vinegar sharpen what olive oil rounds. It is vegetarian, photogenic, and endlessly adjustable.
