Horchata de chufa is a cool, creamy Valencian drink made from soaked and blended tiger nuts (chufas), water, and sugar, strained until silky and served ice-cold. It tastes gently sweet and nutty, refreshing in summer heat without dairy. Classic companions include fartóns—soft elongated pastries for dipping—so the glass becomes a small meal of shade and sweetness.
