Horchata Day
June 23 every year
The story
Horchata de chufa is a cool, creamy Valencian drink made from soaked and blended tiger nuts (chufas), water, and sugar, strained until silky and served ice-cold. It tastes gently sweet and nutty, refreshing in summer heat without dairy. Classic companions include fartóns—soft elongated pastries for dipping—so the glass becomes a small meal of shade and sweetness.
The Alboraya fields near València grow the chufas that define authentic horchata, and horchaterías keep the craft alive with fresh batches daily. Unlike rice or cinnamon horchatas elsewhere, Spanish chufa horchata is its own tradition: pale, frothy when shaken, and best before it separates. It belongs to Mediterranean street refreshment as much as to café culture on hot afternoons.
On Horchata Day, seek a Valencian-style horchateria or blend soaked tiger nuts at home, sweeten lightly, and chill thoroughly. Sip with a pastry for dipping if you can. Celebrating horchata is celebrating València’s most refreshing non-alcoholic summer classic.
