Knafeh Day
26 décembre chaque année
L’histoire
Knafeh (kanafeh) is a celebrated sweet of shredded kataifi or semolina pastry layered with soft melting cheese, baked until the top crisps gold, then soaked in sugar syrup and finished with bright green pistachios. Served hot, the cheese stretches in strings and the pastry crackles under the spoon. Orange blossom or rose water perfume the syrup. One slice is rich enough to share—though few diners actually do.
Popular across the Levant and beloved in Israeli dessert shops and Arab bakeries alike, knafeh is a special-occasion and weekend treat that needs no holiday excuse beyond craving. The contrast of crunchy pastry, molten cheese, and floral syrup is the entire point of the order. Eat it fresh from the oven while the cheese still pulls and the syrup still shines.
On Knafeh Day, bake or order a hot tray, pour syrup generously, and scatter pistachios over the golden top. Celebrate a Middle Eastern dessert that Israelis queue for whenever the pastry is at its blistered, syrupy best. Reheating leftovers rarely matches the first pass.
