The story

Knafeh (kanafeh) is a celebrated sweet of shredded kataifi or semolina pastry layered with soft melting cheese, baked until the top crisps gold, then soaked in sugar syrup and finished with bright green pistachios. Served hot, the cheese stretches in strings and the pastry crackles under the spoon. Orange blossom or rose water perfume the syrup. One slice is rich enough to share—though few diners actually do.

Popular across the Levant and beloved in Israeli dessert shops and Arab bakeries alike, knafeh is a special-occasion and weekend treat that needs no holiday excuse beyond craving.
