The galette des rois is France's January pastry of kings: a round of buttery puff pastry typically filled with frangipane almond cream, baked until golden, and shared so someone can find the hidden fève. Whoever discovers the charm becomes king or queen for the day and wears the paper crown that comes with every proper bakery box. In the north the classic is flaky and almond-scented; in the south a brioche gâteau des rois studded with candied fruit often takes its place. Either way, the ritual of dividing slices fairly—sometimes with the youngest child under the table calling names—matters as much as the cake itself.

The pastry is tied to Epiphany on 6 January, yet bakeries sell galettes for weeks as families and offices repeat the drawing of kings. The tradition survived revolutionary attempts to suppress royal symbols and remains one of the most widely observed food customs in French winter life. Ministry and bakery culture alike treat the galette as living heritage: queues outside pâtisseries, debates over frangipane versus apple, and the small thrill of biting into a ceramic or plastic fève.
