The galette des rois is France's January pastry of kings: a round of buttery puff pastry typically filled with frangipane almond cream, baked until golden, and shared so someone can find the hidden fève. Whoever discovers the charm becomes king or queen for the day and wears the paper crown that comes with every proper bakery box. In the north the classic is flaky and almond-scented; in the south a brioche gâteau des rois studded with candied fruit often takes its place.
