Paella is Spain’s most famous rice dish, born in the fields and wetlands around València, where cooks prepare short-grain rice in a wide, shallow pan over open flame. Traditional Valencian paella mixes rabbit or chicken with beans and vegetables; coastal kitchens and global tables often prefer seafood. Saffron tints the grains gold, and the prized socarrat—the toasted crust at the bottom—marks a pan cooked with patience and heat.
