Dates are desert gold in Israeli agriculture—Medjool, Deglet, and other varieties grown in the Arava and Jordan Valley, sold sticky-soft for snacking or firmer for cooking. Eaten plain, stuffed with nuts or tahini, or folded into desserts, they taste of caramel and honey without refined sugar. A bowl of dates on the table is hospitality in its simplest and oldest form.

Harvest season in late summer and autumn fills markets with glossy fruit that stains your fingers sweetly. Dates pair with coffee, cheese, and sesame paste; silan (date syrup) extends their sweetness into baking, roasting, and drinks.
