Dates are desert gold in Israeli agriculture—Medjool, Deglet, and other varieties grown in the Arava and Jordan Valley, sold sticky-soft for snacking or firmer for cooking. Harvest season in late summer and autumn fills markets with glossy fruit that stains your fingers sweetly.
