Falafel is Israel's iconic street sandwich: deep-fried balls or patties of ground chickpeas (sometimes fava) seasoned with herbs and spices, tucked into pita with hummus, Israeli salad, pickles, and tahini. A perfect falafel is crisp outside, green and fluffy inside, and generous enough that tahini drips down your wrist. Chickpea fritters are shared across the Levant and beyond; in Israel they became the everyday vegetarian fast food of bus stations, markets, and late nights out.
