Falafel Day

The story

Falafel is Israel's iconic street sandwich: deep-fried balls or patties of ground chickpeas (sometimes fava) seasoned with herbs and spices, tucked into pita with hummus, Israeli salad, pickles, and tahini. A perfect falafel is crisp outside, green and fluffy inside, and generous enough that tahini drips down your wrist. Stalls compete on freshness—balls fried to order, never sitting under a warming lamp.

Chickpea fritters are shared across the Levant and beyond; in Israel they became the everyday vegetarian fast food of bus stations, markets, and late nights out. Vendors offer toppings by the spoonful—cabbage, amba, harissa—so each pita is custom-built at the counter. The sandwich is democratic, filling, and designed to be eaten standing up without ceremony.
