Dhokla is Gujarat's steamed snack of fermented batter—often chickpea flour for khaman—turned into a spongy yellow cake tempered with mustard seeds, curry leaves, green chili, and a drizzle of oil. Light, tangy, and barely oily compared with fried street food, it works as breakfast, tea-time bite, or travel snack. The crumb should be airy; the tempering should crackle with aroma the moment it hits the tray.

Western India's snack culture prizes dhokla for balance: fermented brightness, gentle sweetness, and chili heat without heaviness. Street vendors and home kitchens both excel at it, and green chutney is the usual partner. Variants stretch from nylon dhokla to sandwich styles layered with chutney, but the classic square pieces with mustard-seed tadka remain the visual signature. Gujarati thalis often include a piece as a bright counterpoint to richer dishes.
