Dhokla is Gujarat's steamed snack of fermented batter—often chickpea flour for khaman—turned into a spongy yellow cake tempered with mustard seeds, curry leaves, green chili, and a drizzle of oil. Light, tangy, and barely oily compared with fried street food, it works as breakfast, tea-time bite, or travel snack. Western India's snack culture prizes dhokla for balance: fermented brightness, gentle sweetness, and chili heat without heaviness.
