Pani Puri Day

Pani puri—also called golgappa or puchka in different regions—are hollow crisp puris filled with spiced potato or chickpeas and dunked in tangy mint-tamarind water. You eat one in a single bite so the shell cracks and the flavored water bursts across the tongue. Street vendors assemble them at lightning speed; customers rarely stop at one, lining up with the next empty puri already waiting. The snack is pan-Indian with local names and water recipes—sweeter here, fiercer with green chili there, sometimes black salt forward until your lips tingle. It needs no festival calendar: evening markets and weekend stalls are enough to justify the outing. Crispness is everything; stale puris ruin the drama, which is why vendors keep shells sealed until the last second before filling. On Pani Puri Day, keep puris sealed until serving, mix lively pani with mint and tamarind, and fill to order. Offer mild and fierce pani side by side so every guest finds their heat. Celebrate pani puri as India's most playful one-bite street ritual.
