The story

Jiaozi are China's most beloved dumplings: thin wheat wrappers folded around seasoned filling, then boiled, steamed, or pan-fried until tender and juicy. Classic fillings lean pork with cabbage or chives, beef with celery, or egg with chives; coastal kitchens tuck in shrimp. The fold itself is craft—pleats that seal broth and flavor—while dipping sauces of black vinegar, soy, garlic, and chili oil complete the ritual at every table.

Dumplings travel with the calendar as food, not ceremony alone.
