Pintxos Day

The story

Pintxos are Basque Country bar snacks—often a bite of bread topped with fish, pepper, tortilla, or cheese and secured with a toothpick (the pincho). They are meant for standing, hopping between bars, and collecting flavors rather than committing to one long sit-down plate. Crowded counters display colorful rows; you point, pay, and keep moving as the evening unfolds.

San Sebastián and Bilbao made pintxo culture world-famous, but the idea is social as much as culinary: small creativity, local product, and conversation between bites. Anchovies, peppers, spider crab, wild mushrooms, and inventive modern toppings all appear. The toothpick is both fastener and tally in some traditional bars. Quality bread and precise seasoning matter more than size.

On Pintxos Day, assemble a few open-faced bites on good bread—olive and anchovy, pepper and tuna, cheese and quince—and serve them with a small glass of wine or cider. Wander if you can; linger if you must. Celebrating pintxos is celebrating Basque hospitality one skewer at a time.
