The story

Kulfi is India's dense frozen dairy dessert, traditionally set in conical molds and flavored with cardamom, pistachio, mango, or saffron. Unlike airy ice cream, kulfi is cooked-down milk concentrated into richness, then frozen without constant churning, so the texture stays firm and fudgy on the tongue. Street vendors sell it on sticks from insulated carts; restaurants plate elegant slices with falooda threads or crushed nuts.

Summer markets make kulfi a cooling ritual from North to South, with malai, rose, and seasonal fruit versions chasing the heat of April through June. The best kulfi tastes of real milk and spice, not only sugar or artificial perfume. It is dessert and street snack at once—portable for walking, nostalgic for childhood summers, and cutout-friendly on a chilled metal plate with a drip of melted edge.
