The story

Naan is a soft leavened flatbread slapped onto the wall of a tandoor until it balloons, blisters, and picks up characteristic char. Brushed with ghee or butter, sometimes topped with garlic or seeds, it is the restaurant bread that scoops curry and makes a meal feel complete. The crumb should be stretchy; the surface should show toasted bubbles and a few dark freckles where the heat kissed hardest.

Home ovens approximate the tandoor with pizza stones and broilers; the best versions still chase that clay-oven flavor and stretch. It pairs with butter chicken, dal makhani, and kebabs alike, tearing easily for sharing across the table.
