Rasgulla are spongy balls of chhena (fresh cheese) cooked in light sugar syrup until they swell and bounce. Associated especially with Bengal and Odisha sweet traditions, they are pale, delicate, and less heavy than many fried mithai. The syrup should be fragrant and clear; the balls should spring when pressed and taste of clean milk sweetness rather than greasy sugar.

Eastern India's sweet shops elevated rasgulla into a point of regional pride and a gift-box staple for travelers heading home by train. The craft lies in kneading chhena to the right smoothness and simmering gently so the balls cook through without breaking or turning rubbery. Served chilled or at room temperature, they refresh after a spicy meal better than denser desserts that sit heavy.
