The story

Sherry—vino de Jerez—is the fortified wine of Andalusia’s Sherry Triangle, ranging from bone-dry fino and manzanilla to nutty amontillado, rich oloroso, and sweet Pedro Ximénez. Biological aging under flor yeast gives fino its sharp, saline snap; oxidative styles deepen into walnut and caramel. Served cool in a copita, sherry is tapa wine first: olives, almonds, seafood, and jamón love it.

Jerez, Sanlúcar, and El Puerto built a global wine culture centuries deep, with solera systems that blend vintages across time. Sherry’s reputation swung from dessert-only stereotype to chef-beloved aperitif, but in Andalusia it never stopped being local. A good fino with prawns or a PX with cheese shows the range in one sitting. It is Mediterranean wine craft with a unique biology.
