Canelé Day
June 28 every year
The story
The canelé (or cannelé) is Bordeaux's small pastry with a dark caramelized crust and a soft, custardy interior scented with vanilla and rum. Baked in fluted copper or silicone molds, canelés emerge almost burned on the outside and tender within—a deliberate contrast that addicts locals and visitors alike. They are afternoon snacks, breakfast treats, and edible souvenirs of the Gironde.
The pastry's history ties to Bordeaux's wine and flour trades; rum and vanilla echo Atlantic port commerce. Achieving the right crust without a dry center is a baker's puzzle involving beeswax-lined molds, batter rest, and hot ovens. Bakeries that excel draw lines; mediocre canelés disappoint instantly. Size varies from bite-sized to substantial, but the fluted silhouette stays unmistakable.
On Canelé Day, seek a Bordeaux-style bakery or bake a batch if you own the molds. Eat them the day they are made, when the shell still snaps. Celebrating canelés is celebrating regional French pastry: port spices, caramel edges, and a humble mold that hides a custard heart.
