Amba Day
July 19 every year
The story
Amba is a tangy-spicy pickled mango sauce fragrant with fenugreek, turmeric, and chili—bright yellow-orange and unforgettable on first smell. In Israel it crowns sabich, shawarma, and falafel, cutting through fried and fatty bites with sweet heat and savory funk. A little goes far; a lot announces that you know exactly how you like your sandwich built.
Iraqi Jewish and broader Middle Eastern pickle traditions brought amba into Israeli street stalls, where plastic squeeze bottles sit beside tahini as equal partners. Homemade versions ferment mango with spices; commercial jars keep the flavor available year-round for home cooks. It is an appetizer sauce, a condiment, and a personality test for how bold you like lunch to taste.
On Amba Day, spoon the pickle over eggplant sandwiches or grilled meat, or taste it on warm pita alone to understand the spice. Celebrate a Middle Eastern condiment that became essential Israeli street flavor—loud, golden, and impossible to ignore. Store opened jars cold; the spice only deepens.
