Risotto Milanese Day
December 7 every year
The story
Risotto alla Milanese is Milan's golden rice dish, simmered with saffron, beef marrow or butter, onion, and stock until the grains are creamy yet distinct. Arborio, Carnaroli, or Vialone Nano rice release starch as they cook, creating a sauce without cream. The saffron stains the pot a deep yellow and perfumes every spoonful. Traditionally served alongside ossobuco or on its own as a primo, it is the taste of Lombardy's capital on a plate—refined, rich, and unmistakably northern.
Making risotto is a ritual of attention: toast the rice, add hot stock ladle by ladle, and stir until the texture is all'onda—wavy and flowing on the plate. Finish off the heat with butter and Parmigiano for mantecatura, the final enrichment that makes the dish gleam. On Risotto Milanese Day, bloom saffron in a little stock, cook patiently, and serve immediately in warm bowls.
Share it as a first course or a main with friends. Celebrating risotto alla Milanese is celebrating Milan's sunny elegance in a bowl of rice.
