The story
Mapo tofu is Chengdu's iconic wok dish of soft tofu cubes simmered in a fiery sauce of doubanjiang chili bean paste, chili oil, Sichuan pepper, and usually minced meat—though vegetable versions keep the mala soul intact. The tofu should quiver, the sauce should gloss red, and the finish should numb slightly as heat blooms across the lips. Scallion or garlic shoots brighten the top of the finished dish.
Attributed to a Qing-era Chengdu cook and now a global symbol of Sichuan cooking, mapo tofu proves that tofu need not be bland or apologetic.
