Croquetas Day

The story

Croquetas are Spain’s most persuasive tapa: a creamy béchamel bound with ham, chicken, cheese, or salt cod, chilled, breaded, and fried until the shell shatters and the center flows. The craft is in the filling—thick enough to hold shape when cold, lush enough to surprise when hot. Bars fry them to order; grandmothers make trays for gatherings; every cook guards a preferred ratio of milk, flour, and flavoring.

Though béchamel came through French technique, Spanish croquetas became their own institution—jamón ibérico, cocido leftovers, wild mushrooms, or spinach for meatless plates. They reward patience: the mixture must cool firmly before breading, or the fryer wins. A perfect croqueta is small enough for one or two bites and rich enough that a few on a plate feel like a feast.

On Croquetas Day, cook a thick béchamel with diced ham or mushrooms, chill it overnight, then bread and fry until deep gold. Serve immediately with nothing more than a napkin and good company. Celebrating croquetas is celebrating Spanish tapa craft at its most irresistible.
