Salade Niçoise Day

The story

Salade niçoise is the composed salad of Nice: tomatoes, hard-cooked eggs, olives, anchovies or tuna, and often green beans, potatoes, or raw peppers, dressed with olive oil. Purists debate boiled vegetables versus raw crunch; restaurants worldwide invent freely. At its best it is bright, salty, and structured—a meal salad that tastes of the Côte d'Azur without needing a stove for long.

The salad reflects Provençal pantry logic: preserved fish, local olives, and market produce. Tourism carried it far from Nice, sometimes blurring into generic tuna salads. Returning to good olive oil, ripe tomatoes, and restrained garnish restores its character. It is summer lunch food: colorful, protein-rich, and meant for a shaded table.
