The story

Malawach is a flaky Yemenite flatbread—laminated dough cooked on a hot pan until blistered, golden, and shatteringly layered. Torn and dipped into grated tomato, hard-boiled egg, honey, or zhug, it swings from savory breakfast to sweet snack without changing form. The layers trap steam and fat, so each bite feels richer than a simple flatbread and leaves buttery flakes on your fingers.

Like jachnun, malawach traveled with Yemenite cooks and became a staple of Israeli bakeries, frozen-aisle shortcuts, and market stalls. It is faster than overnight pastry yet still feels festive when stacked high and torn by hand at the table. Cafés serve it with salad and labneh; home cooks fold fillings inside or keep it plain for dipping into everything spicy and bright.
