The story

Lasagna is Italy's layered baked pasta, most famously the Bolognese style with sheets of egg pasta, ragù, béchamel, and Parmigiano baked until the top blisters and the center sets. Other regions offer variations—Naples leans toward ricotta and meatballs; the south may use tomato more boldly—but the idea of stacked comfort remains. Assembling lasagna is an act of generosity: you build it for a crowd, rest it briefly after baking, and cut squares that reveal neat strata of sauce and pasta.

The dish turns Sunday into an event. Fresh pasta sheets yield a silkier bite; dried sheets need careful saucing so they soften fully in the oven. On Lasagna Day, simmer a ragù ahead of time, whisk a smooth béchamel, and layer patiently in a deep dish with plenty of cheese between the sheets. Bake until bubbling and golden, rest about ten minutes, and serve with a simple green salad. Celebrating lasagna is celebrating Italian home cooking at its most abundant—time, layers, and a pan meant to be shared.
