The story

Taiyaki is a warm, fish-shaped pastry filled most classically with sweet red bean paste, baked in cast-iron molds until the outside crisps to golden brown. Street stalls and festival booths pour batter into tai-shaped pans, add filling, and flip them into fragrant cakes that fit neatly in one hand. The sea-bream shape nods to good fortune—tai has long been a lucky fish in Japanese celebration—while the filling stays humble and comforting. Custard, chocolate, and sweet potato versions now share the menu, yet anko remains the soul of traditional taiyaki.

Born in early twentieth-century street culture, taiyaki joined imagawayaki and other griddle sweets as affordable treats for city crowds. Today it appears at winter festivals, shopping streets, and specialty shops that argue over batter thinness and filling generosity.

On Taiyaki Day, buy a hot fish-shaped cake from a stall and break it open while the steam rises, or try baking mini versions at home. Share one with a friend on a walk, pair it with tea, or sample a modern filling beside the classic bean paste.
