The story

The bagel, originating in 13th-century Eastern Europe, began as the obwarzanek, a boiled, ring-shaped bread. In Polish (bajgiel) and Yiddish (beygal), Jewish bakers created a unique cultural symbiosis by baking for both Jewish and Christian communities. By the 17th century, bagels were integral to Polish and Slavic diets, associated with childbirth and Jewish mourning rituals. In the 19th century, Polish Jewish immigrants brought bagels to the U.S., notably to New York City, where bagel culture thrived. In 1907, New York bagel bakers formed the International Beigel Bakers Union, engaging in labor strikes to protect bagel making traditions. The bagel's trajectory shifted in the 20th century with Meyer Thompson's bagel-making machine in 1918, later championed by Murray Lender. This innovation enabled mass production, introducing various flavors and pre-sliced, frozen options beyond the classic plain and salt bagels. By the mid-20th century, bagels became a nationwide phenomenon, often paired with lox and cream cheese. However, the bagel's popularity led to the decline of powerful bagel unions and alterations to traditional recipes with the introduction of preservatives. This shift reflected the challenges of preserving culinary heritage amid modernization.
