Comté Day
September 28 every year
The story
Comté is a firm, nutty cooked-curd cheese from the Jura mountains, made from raw cow's milk and aged for months in wheels that can weigh dozens of kilograms. Flavors range from milky and fruity when younger to toasty, crystalline, and complex when older. Shaved over salads, melted in cooking, or eaten in thick wedges with bread, Comté is one of France's great alpine AOP cheeses and a favorite on serious cheese boards.
Cooperative fruitières and careful aging caves sustain a culture of mountain dairy that feels both traditional and meticulously graded. Season of milk, altitude, and age create endless nuance within one name. Comté melts beautifully for croque fillings and fondue-like dishes yet shines alone with walnuts and honey.
On Comté Day, choose a wedge with an age that suits you, bring it to room temperature, and serve with bread or fruit. Taste for toasted hazelnut and caramel notes. Celebrating Comté is celebrating French mountain cheese: cooperatives, caves, and a wheel that rewards patience.
