Pita Day
June 28 every year
The story
Pita is the soft, pocketed flatbread that holds Israeli street food together. Baked hot so steam puffs a hollow center, it tears easily and stays pliable around falafel, schnitzel, salad, or shawarma. Fresh pita smells yeasty and sweet; stale pita becomes chips or a disappointment. Bakeries turn out stacks morning and evening because demand never really pauses.
Flatbreads are ancient across the Mediterranean and Middle East; the Israeli pita is everyday infrastructure—sandwich vessel, scoop for hummus, plate for anything grilled. Thickness and chew vary by bakery, but the goal is the same: a warm pocket that does not crack when filled to bursting. Serving pita hot is a quiet act of hospitality at home and on the street.
On Pita Day, bake or buy loaves still soft from the oven, fill one generously and tear another for dipping into hummus or labneh. Celebrate the Mediterranean-Middle Eastern bread that makes every other Israeli dish possible and portable. Freeze extras and revive them briefly in a hot oven.
