Carnitas Day

The story

Carnitas are Michoacán's gift of pork cooked low in its own fat until the interior turns silky and the edges crisp into golden bites. Cubes or larger cuts simmer for hours with orange, milk, or simply salt, then are chopped and finished hot so every taco gets tender shreds and crunchy bits. Served with tortillas, salsa, cilantro, and lime, they need little else to feel complete.

Michoacán stands at the center of the UNESCO-recognized paradigm of traditional Mexican cuisine—community cooks, maize culture, and festive meats—and carnitas are among its most delicious ambassadors. Towns built reputations on copper cauldrons and weekend crowds that line up before noon. The dish traveled nationwide yet still tastes most honest when the pork is patiently confited.
